Sourced from Cave Spring Vineyard's oldest, lowest-yielding vines, this structured, elegant wine is a faithful expression of the limestone-rich soils. It shows attractive notions of hazelnut, ripe apple, crème brûlée, vanilla extract and stony mineral, with a suggestion of coconut on the finish. Pair it with grilled salmon, lobster with wild rice, or stuffed pork tenderloin.
From one of Niagara's most reliable premium producers, this characterful, consistent, charming Cabernet Franc is ripe and concentrated, with generous blueberry, black fruit, cassis, forest floor, roasted red pepper, savoury herbs, earth, coffee, and lifted mint tones. Polished and enjoyable, it's drinking beautifully now and will continue to evolve into the mid 2030s.
Against the limestone cliffs of the Niagara Escarpment, sits Cave Spring Vineyard and some of the oldest Riesling vines in Ontario. This charming Riesling highlights the grape's fruity character and the minerality it develops from Niagara's limestone-rich soil. Expect pear, quince and refined minerality.
Maturing but still very lively and impeccably balanced, the CSV 2017 Blanc de Blancs was aged for 5+ years sur lie, made from a selection of the premium parcels of mature vines on the Cave Spring property. It pours a pale gold colour, and shows a mix of youth and evolution, fresh lemon and wildflower honey, meadow flowers and fresh wheat, well within the classic spectrum. The palate is notably dry and crisp with minimal dosage apparent (presumably brut nature, though labeled as 'Natural Brut'), with ripe acids framing the broad palate without austerity or excess. Length and depth are excellent. Top notch, ready to enjoy, and a sharp value at $50 especially relative [to] the even basic entry level champagne at higher cost. Tasted November 2024. Score - 94. A finely balanced riesling from one of Ontario's premier wine producers. It's pale yellow and has aroma and flavours of fresh lime and its blossoms, starfruit and pear with mineral tones. The palate is dry, medium-bodied with crisp acidity and notes of citrus and spice on the finish. Pair with light meat, fish or seafood.

This vibrant Riesling-based sparkling alights the senses with waves of freshness.
