The vines of Pascal Bouchard are grown in the Kimmeridgian marl soils of Irancy in northern Burgundy near the Yonne River. It's a region well-known for imparting a mineral-driven character, resulting in compelling earthy aromas. This Pinot Noir mixes red fruit flavours with notes of mushrooms and tree moss. A great match for mushroom risotto.
An organic wine - quite a challenge in 2021. Perhaps not the deepest or weightiest Fourchaume but this is made up for a light, precise palate which is very refined and elegant. Salty, fresh notes to finish. Drinking window: 2023-2027. Score - 91. (Andy Howard, MW, decanter.com, Oct. 16, 2022)
Although most white Burgundy is made from Chardonnay, white wines crafted from Aligoté can be exceptionally sleek and dynamic while offering great value. This one was grown in calcareous clay and vinified in stainless steel, where it was then aged for eight months. It delivers crisp apple along with tender white peach and pear notes. Excellent with seafood.
Chablis specialist Pascal Bouchard matures this grand cru in neutral oak barrels for 12 months followed by an additional two months resting on the fine lees in stainless steel, thereby rounding out the edges while retaining precision, finesse, and mineral expression. Evocatively flinty and smoky, it will show beautifully now and evolve through 2036 and beyond.
